Spiced Apple Raisin Compote

YIELDS 4 CUPS COMPOTE

INGREDIENTS

Compote

  • 3 pounds apples

  • 2 Tbsp brown sugar

  • ½ cup raisins

  • 1½ tsp cinnamon

  • 1 tsp vanilla extract

  • 1 cup water

Cornstarch Mixture

  • 1 cup water

  • 2 Tbsp cornstarch

DIRECTIONS

  1. Peel, core, and finely chop apples.

  2. Create Cornstarch Mixture by slowly adding 2 Tbsp cornstarch to 1 cup of water, stirring continuously.

  3. To a 4-quart (or larger) pan, add chopped apples, brown sugar, raisins, cinnamon, and 1 cup water.

  4. Cook on medium-high heat with lid on. Stir occasionally.

  5. After 10 minutes, remove lid and continue cooking until water evaporates. Replace lid. Continue cooking until apples soften and turn golden in color (add more water if needed, to prevent burning.)

  6. Once apples achieve desired texture and color, raise heat, remove lid again, and add Cornstarch Mixture.

  7. Add vanilla extract.

  8. Stir until thick, then remove from heat and serve warm. Use as a topping for pancakes or waffles, or mix into oatmeal!
