Tex-Mex Popcorn

Tex-Mex

YIELDS 9-12 CUPS POPCORN

INGREDIENTS

Perfect Popcorn

  • 1/2 cup popcorn kernels

  • 1/2 tsp fine salt

  • 3 Tbsp canola oil

  • 3 Tbsp butter

Tex-Mex Seasoning

  • 2 oz Cotija or parmesan cheese, finely grated

  • ½ lime, zested and juiced

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp cumin

  • 1 tsp paprika

  • 1 tsp chili powder

  • 1 pinch cayenne pepper

DIRECTIONS

  1. Add popcorn kernels, salt, and oil to a 4-quart (or larger) pan. Cover with a not-too-tight lid so steam can escape.

  2. Place pan over a high flame and wait for kernels to begin popping.

  3. When kernels begin to pop, move pan back and forth just above flame to avoid burning. Continue shaking pan until popping almost stops.

  4. Turn off heat, stir in any salt that accumulated on the side of the pan, and transfer popcorn to a bowl.

  5. Add 3 Tbsp butter to the warmed pan to melt, then drizzle over the popcorn. Toss to mix*
    *Do not mix with hands, as butter will still be hot! Use a spoon or spatula.

  6. Zest then juice lime. Drizzle both over popcorn and toss to mix.

  7. Mix Tex-Mex Seasoning spices in a separate bowl and then sprinkle over popcorn., followed by grated cheese.

  8. Toss again to mix in all ingredients, then serve and enjoy!
