Potato & Sweet Potato Latkes

SERVES 6

INGREDIENTS

  • 1 medium sweet potato, peeled

  • 2 medium baking potatoes, peeled

  • ¼ c minced chives or green onion

  • 1 Tbsp flour

  • 2 eggs

  • 1 tsp kosher salt

  • Vegetable oil

​Garnish

  • Sour cream

  • Applesauce

DIRECTIONS

  1. Shred the sweet potato and potatoes.

  2. Repeatedly squeeze out as much water as possible from the potatoes (and onion).

  3. Add chives or onions, flour, eggs, and salt to the dry potatoes; gently mix.

  4. Heat oil in a 12" skillet over medium heat. Ladle 1/8 cup portions into the fry pan.

  5. Cook until golden brown.

  6. Serve hot. Garnish with applesauce or sour cream.
