Creamy Black Bean Dip

SERVES 6

INGREDIENTS

  • 1 (15 oz) can black beans

  • 1 small clove garlic, minced

  • 1/4 cup sour cream

  • 3 Tablespoons cilantro leaves, minced

  • 1 lime, juiced

  • 1/4 teaspoon cumin

  • 1/4 teaspoon smoked paprika

  • 1 teaspoon fine salt

  • 1-2 Tablespoons water if too thick

​Garnish

  • 1 Tablespoon fresh cilantro, minced

  • 1 stalk green onion, minced

DIRECTIONS

  1. Drain and rinse black beans.

  2. Put all ingredients in a bowl (except garnish).

  3. Puree with a masher or fork until smooth.

  4. Add water if too thick. Taste and adjust seasoning.

  5. Garnish and serve.
