Italian Chopped Salad

SERVES 6

INGREDIENTS

Dressing Ingredients​

  • ¼ c olive oil

  • 2 Tbsp white wine vinegar

  • ½ tsp dried oregano

  • 1 small clove garlic, grated or minced

  • ¼ tsp sugar

  • ½ tsp salt

  • ¼ tsp pepper

​Salad Ingredients

  • 5 cups of chopped romaine lettuce

  • ⅔ c chickpeas, drained and rinsed (½ can)

  • c red onion, thinly sliced

  • ½ c fresh fennel, thinly sliced

  • ½ c red pepper, diced

  • ¼ c Parmesan or other Italian cheese, finely grated

  • pepperoncini pickled peppers, thinly sliced

  • 5 Kalamata olives, pitted & sliced

DIRECTIONS

  1. Whisk together all of the dressing ingredients except the oil, then slowly whisk in the oil until thick.

  2. Combine lettuce, chickpeas, red onion, fennel, bell pepper, cheese, pepperoncinis, and olives in a large bowl. Add dressing as desired. Toss and serve.
