Chickpea Salad Sandwich


SERVES: 4


INGREDIENTS


Chickpea Salad

  • 1 (15oz) can chickpeas, drained & rinsed

  • 2 Tbsp mayonnaise

  • 2 tsp Dijon mustard

  • ½ lemon, juiced

  • 1 celery stalk, finely chopped

  • 5 cherry tomatoes, chopped

  • 1 green onion, minced

  • 2 Tbsp parsley, minced

  • ¼ tsp garlic powder

  • 1 pinch cayenne

  • 2 pinches salt

  • 2 pinches black pepper


Sandwich Ingredients

  • Whole wheat bread, sliced

  • Lettuce or leafy greens (ex: spinach, arugula, etc.)


DIRECTIONS

  1. In a large bowl mash together chickpeas, mayonnaise, mustard, and lemon juice. Mix in the rest of the Chickpea Salad Ingredients. Adjust seasoning as needed.

  2. Ladle out ¼ cup of the chickpea salad and spread onto a slice of whole wheat bread, then top it with another slice of bread.

  3. Heat a large skillet on medium high. Once your skillet is hot, place your sandwich in the middle of the skillet, cook until golden brown on each side –about 1 or 2 minutes per side.

  4. Add lettuce or greens. Cut and serve.


*Have extras? This salad can be refrigerated for 3-4 days. Makes a quick and easy lunch!
