1 (15oz) can chickpeas, drained & rinsed
2 Tbsp mayonnaise
2 tsp Dijon mustard
½ lemon, juiced
1 celery stalk, finely chopped
5 cherry tomatoes, chopped
1 green onion, minced
2 Tbsp parsley, minced
¼ tsp garlic powder
1 pinch cayenne
2 pinches salt
2 pinches black pepper
Whole wheat bread, sliced
Lettuce or leafy greens (ex: spinach, arugula, etc.)
In a large bowl mash together chickpeas, mayonnaise, mustard, and lemon juice. Mix in the rest of the Chickpea Salad Ingredients. Adjust seasoning as needed.
Ladle out ¼ cup of the chickpea salad and spread onto a slice of whole wheat bread, then top it with another slice of bread.
Heat a large skillet on medium high. Once your skillet is hot, place your sandwich in the middle of the skillet, cook until golden brown on each side –about 1 or 2 minutes per side.
Add lettuce or greens. Cut and serve.
*Have extras? This salad can be refrigerated for 3-4 days. Makes a quick and easy lunch!
