Spicy Bean Dip



(SERVES 6)


INGREDIENTS

  • 1 (15 oz) can pinto beans (1½ c)

  • 1 small garlic clove, grated

  • Juice of ½ lemon

  • 2 Tbsp olive oil

  • 1 chipotle pepper, minced

  • 1 tsp adobo sauce

  • ¼ tsp kosher salt

  • ½ tsp cumin

  • 1 tsp chili powder

  • 1-2 Tbsp water (if too thick)

​Garnish

  • 2 Tbsp minced cilantro

  • 1 stalk green onion, minced

SERVE WITH

  • Corn Tortillas, warmed

  • Pico de Gallo

  • Sour Cream

DIRECTIONS

  1. Drain and rinse beans.

  2. Put all ingredients in a bowel, EXCEPT GARNISH.

  3. Puree with masher or fork until smooth. Add water if necessary. Taste and adjust seasoning.

  4. Garnish with cilantro and green onion.
