Root Soup


SERVES: 8


INGREDIENTS

  • 3 Tbsp olive oil

  • 2 oz. smoked turkey, finely chopped

  • 1 large yellow onion, finely chopped

  • 1 tsp salt

  • 1 large apple or pear, peeled, cored, coarsely chopped

  • 1 medium turnip, peeled, finely chopped

  • 1 large carrot, finely chopped

  • 1 large sweet potato, peeled, finely chopped

  • ½ tsp black pepper

  • ¼ tsp cayenne pepper

  • 2 cups + 4 cups stock

  • 2 Tbsp maple syrup (optional)


Garnish

  • Sour cream

  • Fresh chives or green onion, finely chopped


DIRECTIONS

  1. Heat oil and smoked turkey in a large sauce pan on medium-high heat. Add onion and salt; sauté until translucent.

  2. Add apple or pear, turnip, carrot, and sweet potato; sauté for 4 minutes.

  3. Add 2 cups of stock, return lid and steam vegetables until tender for 10 minutes.

  4. Add syrup, black pepper, and cayenne pepper and purée the cooked vegetables in the pot with potato masher.

  5. Stir in the remaining stock, bring to desired temperature.

  6. Serve and top with a dollop of sour cream; sprinkle with chives.
