Serves: 2-4
INGREDIENTS
3 Tbsp oil
2 zucchini, diced
1 small onion, diced
½ cup shiitake mushrooms, diced
SAUCE INGREDIENTS
¼ cup of soy sauce
1 Tbsp cornstarch
½ Tbsp garlic powder
¼ tsp curry powder
½ tsp black pepper
DIRECTIONS
In a small bowl, combine all sauce ingredients and stir until even.
Add oil to a pan and bring to medium heat.
Add zucchini, mushrooms, and onions to the pan. Cook until onions begin to turn translucent, stirring occasionally.
Pour sauce over vegetables, then stir. Cook for another 3-5 minutes, stirring occasionally. Enjoy!
