Simple Side Salad with Lemon Vinaigrette

INGREDIENTS

Salad

  • 10 oz salad greens (Romaine, leaf lettuce, etc.)

  • 2 Tablespoons parsley, minced (optional)

  • Chopped vegetables, as desired (Try tomatoes, cucumbers, green onions, radishes, or carrots!)

Lemon Vinaigrette

  • 1 Tbsp lemon juice (about ½ lemon)

  • 3 Tbsp olive oil

  • ½ tsp Kosher salt

  • tsp black pepper

  • 1 pinch sugar

DIRECTIONS

  1. Wash greens thoroughly in a cold water bath. Spin in a salad spinner or place on a towel to dry.

  2. Gently shred greens into bite-sized pieces.

  3. Add lemon juice, salt, black pepper, and sugar to a large salad bowl and whisk together.

  4. Continue whisking quickly while very slowly drizzling in oil. Whisk until the dressing is thick and completely emulsified.

  5. Add greens and any other vegetables and gently toss. Taste. Add more salt or black pepper if desired. Serve and enjoy!
