Southwest Corn Fritters

YIELDS 20 SILVER-DOLLAR-SIZED FRITTERS

INGREDIENTS

  • 1 cup milk

  • 1 cup cornmeal

  • 1 large egg

  • ½ cup flour

  • 1 Tbsp oil

  • 1 cup corn, minced

  • 2 green onions, minced

  • ½ cup shredded cheddar cheese

  • 1 Tbsp vinegar

  • 1 green chili, minced (optional)

  • 1 tsp baking soda

  • ¼ tsp cumin

  • ½ tsp chili powder

  • ¼ tsp fine salt

  • 1 tsp sugar

​Garnish:

  • Sour Cream or Greek Yogurt

  • Green onion 

  • Cilantro 

DIRECTIONS

  1. Add 1 Tbsp vinegar to 1 cup milk. Set aside and allow to thicken for 5 minutes.

  2. Blend cornmeal, flour, spices, baking soda, sugar, and salt in a large bowl.

  3. Next add egg, oil, corn, green onions, cheese, green chili, and thickened milk to the cornmeal mixture. Mix well.

  4. Heat oil over medium high heat in a large skillet. Spoon in cup fritter batter, cooking until golden brown (3-4 minutes) on each side.

  5. Serve warm with garnish of choice and enjoy!
