White Bean Dip

SERVES 6

INGREDIENTS

Bean Dip

  • 1 1/2 cups white beans (one 15 oz can)

  • 1 small garlic clove, grated

  • 3 tsp lemon juice
    (about
    ½ lemon)

  • 3 Tbsp olive oil

  • 3 Tbsp minced fresh parsley

  • ¼ tsp Kosher salt

  • ⅛ tsp black pepper

Garnish

  • 1 Tbsp olive oil, drizzled

  • 1 Tbsp minced fresh parsley

  • 2 tsp balsamic vinegar or lemon juice (optional)

DIRECTIONS

  1. Drain and rinse white beans.

  2. Put all ingredients in a bowl, except Garnish.

  3. Purée with a masher or fork. Taste and adjust seasoning.

  4. Garnish by drizzling olive oil and sprinkling on some fresh parsley. Serve and enjoy!
