Whole Plant Chopped Salad

SERVES 6 SIDE SALADS

INGREDIENTS

  • 1 heart romaine lettuce, chopped

  • ½ c cauliflower florets, chopped

  • 1 small cucumber, chopped

  • ¼ red bell pepper, diced

  • 1 small carrot, peeled & finely chopped

  • 1 Tbsp minced celery stalk & leaves

  • 2 stalks green onion, minced

  • 3 Tbsp sunflower seeds

  • 1 Tbsp parsley, minced

  • Salt & pepper to taste

  • Favorite dressing to taste

DIRECTIONS

  1. Toss all ingredients in a large bowl with your favorite homemade dressing.

  2. Season to taste with salt and pepper. Serve.
