SERVES: 8-10
INGREDIENTS
(15 oz.) can black beans (1 ½ cups beans), drained and rinsed
1 cup sweet corn
3 cups tomatoes (Roma or cherry tomatoes), finely chopped
1 large lime, juiced
1 small Poblano pepper, finely chopped
1 small onion, finely chopped
¼ cup cilantro, finely chopped
1 garlic clove, peeled and grated or minced
½ tsp cumin
1 tsp salt
½ tsp black pepper
1 Tbsp olive oil
DIRECTIONS
Prepare all ingredients and put them into a large bowl.
Mix all ingredients together.
Serve with tortilla chips.
