Moroccan Carrot & Chickpea Fritters


YIELDS: 20 silver-dollar-sized fritters


INGREDIENTS

  • 3 medium carrots, peeled and grated

  • 1 (15oz) can chickpeas, drained, rinsed, and mashed

  • 3 green onions, minced

  • 2 Tablespoons cilantro, minced

  • 1 garlic clove, minced

  • 1 large egg

  • 2 oz feta cheese, crumbled

  • ¼ cup whole wheat flour

  • ¼ teaspoon baking powder

  • ½ teaspoon kosher salt

  • ¼ teaspoon black pepper

  • ¼ teaspoon turmeric

  • 1 pinch cinnamon

  • 1 teaspoon cumin

  • ¼ teaspoon paprika

  • 3 Tablespoons water

  • Oil for cooking


Garlic Yogurt Sauce

  • 2 teaspoons lemon juice

  • 1/2 cup yogurt

  • 1 teaspoon olive oil

  • 1 small clove garlic, minced

  • ¼ teaspoon kosher salt


Garnish

  • Minced cilantro

  • Garlic Yogurt Sauce


DIRECTIONS

  1. Peel and grate carrots using the large holes of a box grater.

  2. Drain, rinse, and mash chickpeas.

  3. Mix all ingredients (except garnish) in a large bowl. Add more water if mixture is too thick.

  4. Heat oil on medium high in a large skillet. Ladle out 1/8 cup of mixture. Press flat with a spatula. Fry until golden on each side (about 3-4 minutes). Add more oil as needed.

  5. Mix Garlic Yogurt Sauce ingredients together.

  6. Garnish fritters with Garlic Yogurt Sauce and minced cilantro. Serve. Enjoy!
