YIELDS: 20 silver-dollar-sized fritters
INGREDIENTS
3 medium carrots, peeled and grated
1 (15oz) can chickpeas, drained, rinsed, and mashed
3 green onions, minced
2 Tablespoons cilantro, minced
1 garlic clove, minced
1 large egg
2 oz feta cheese, crumbled
¼ cup whole wheat flour
¼ teaspoon baking powder
½ teaspoon kosher salt
¼ teaspoon black pepper
¼ teaspoon turmeric
1 pinch cinnamon
1 teaspoon cumin
¼ teaspoon paprika
3 Tablespoons water
Oil for cooking
Garlic Yogurt Sauce
2 teaspoons lemon juice
1/2 cup yogurt
1 teaspoon olive oil
1 small clove garlic, minced
¼ teaspoon kosher salt
Garnish
Minced cilantro
Garlic Yogurt Sauce
DIRECTIONS
Peel and grate carrots using the large holes of a box grater.
Drain, rinse, and mash chickpeas.
Mix all ingredients (except garnish) in a large bowl. Add more water if mixture is too thick.
Heat oil on medium high in a large skillet. Ladle out 1/8 cup of mixture. Press flat with a spatula. Fry until golden on each side (about 3-4 minutes). Add more oil as needed.
Mix Garlic Yogurt Sauce ingredients together.
Garnish fritters with Garlic Yogurt Sauce and minced cilantro. Serve. Enjoy!
