SERVES: 6-8 side portions
6 medium potatoes, peeled, diced and boiled (2.5 pounds)
1 large onion, thinly sliced
2 + 1 Tbsp oil
½ tsp kosher salt
1 tsp mustard seed
1 tsp cumin seed
1 tsp grated ginger
1 medium clove garlic, grated
1 tsp garam masala or curry powder
1-2 pinches red chili powder
½ tsp turmeric
1/3 cup minced coriander (cilantro)
Heat 2 Tbsp oil in a large pan with a lid. Add mustard seeds and cumin seeds and fry with lid on. Once the seeds start to pop and sputter, add onion and sauté until it becomes golden.
Add the remaining spices, ginger, and garlic; fry for 30 more seconds.
Add the cooked potato and mix well with the spices.
Turn off heat and stir in the minced coriander.
