Pickled Radish Slaw

YIELD: 1 ½ cups


  • 2 teaspoons sugar, maple syrup, or honey

  • 2 limes, juiced

  • 1 ½ cup radishes, thinly sliced into half moons

  • 1 jalapeño, seeded (optional), thinly sliced into half moons

  • 3 green onions, minced

  • ¼ - ½ cup cilantro, minced


  1. In a medium bowl, mix sugar and lime juice. Add radishes, jalapeño, green onion, and cilantro.

  2. Mix until the slaw is evenly coated and let it rest for about 5 minutes.

  3. Serve on top of your Lentil Tacos or add on top of your favorite veggie bowls, sandwiches, or eat plain.
