Spicy Bean Dip

SERVES: 6
INGREDIENTS
1 (15 oz) can pinto beans (1½ cups)
1 small garlic clove, grated
Juice of ½ lemon
2 Tbsp olive oil
1 chipotle pepper, minced
1 tsp adobo sauce
¼ tsp kosher salt
½ tsp cumin
1 tsp chili powder
1-2 Tbsp water (if too thick)
Garnish
2 Tbsp cilantro, minced
1 stalk green onion, minced
DIRECTIONS
Drain and rinse beans.
Put all ingredients in a bowel, EXCEPT GARNISH.
Puree with masher or fork until smooth. Add water if necessary. Taste and adjust seasoning.
Garnish with cilantro and green onion.
