One-Pot Sesame Zucchini Noodles

Yield 4-5 Servings


INGREDIENTS

  • 2 medium zucchini, spiralized into noodles

  • ½ large onion, sliced

  • ½ cup carrots, shredded

  • ½ bunch asparagus, ends trimmed and cut in halves

  • 1 cup broccoli florets

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 2 garlic cloves, minced

  • 2-3 TBSP soy sauce (adjust to taste)

  • ⅔ cup vegetable broth

  • 1 TBSP olive oil

  • ½ TBSP garlic powder

  • ½ TBSP onion powder

  • Pinch of salt (to taste)

  • 1 tsp black pepper

  • 1 TBSP sesame oil (optional, for drizzling)

  • Black sesame seeds (optional, garnish)


DIRECTIONS

  1. Prep vegetables. Heat a large pan or wok with oil over medium heat.

  2. Sauté onions until fragrant and translucent. Add garlic and sauté for another minute.

  3. Add carrots, asparagus, broccoli, bell peppers, and vegetable broth. Stir.

  4. Add soy sauce and seasonings (garlic powder, onion powder, black pepper, and optional salt). Stir.

  5. Cover for 15 minutes, stirring occasionally, until slightly tender but still risp.

  6. Add zucchini noodles and toss everything together. Cook for an additional 3-5 minutes until noodles are just tender. Do not overcook.

  7. Remove from heat. Drizzle with sesame oil and sprinkle sesame seeds on top if desired.

  8. Serve warm and enjoy.
