Simple South Indian Potatoes

SERVES: 4 as a side dish


INGREDIENTS

  • 2-3 Tbsp oil

  • 1 pound potatoes, finely diced

  • ¼ cup water (optional)

  • 1 tsp turmeric

  • 1 tsp salt

  • 1 tsp paprika

  • 1/8 - ¼ pinches cayenne pepper

  • 1/3 cup green onions or any type of onion, minced

  • ¼ cup cilantro, minced


DIRECTIONS

  1. Cook potatoes with oil, salt, and spices in a covered pan on medium heat for 2-3 minutes.

  2. Add water, cover pan, and continue to cook for about 8 minutes, stirring occasionally.

  3. Meanwhile, prepare onions and cilantro.

  4. Once the potatoes are barely tender, turn up the heat to medium-high and sauté until slightly golden.

  5. Toss with green onions and cilantro and serve as a side dish.
