SERVES: 10 side portions
3 Tbsp oil
3 pounds potatoes, finely diced
1 tsp turmeric
1 tsp salt
1 tsp paprika
¼ tsp cayenne pepper
1 medium onion, minced
¼ cup cilantro
Cook potatoes with oil, salt, and spices in a covered pan on medium heat for 10 minutes stirring occasionally.
Meanwhile, prepare onions and cilantro
Once the potatoes are barely tender, turn up heat and sauté until slightly golden.
Toss with raw onions and cilantro and serve.
