SERVES: 4 as a side dish
2-3 Tbsp oil
1 pound potatoes, finely diced
¼ cup water (optional)
1 tsp turmeric
1 tsp salt
1 tsp paprika
1/8 - ¼ pinches cayenne pepper
1/3 cup green onions or any type of onion, minced
¼ cup cilantro, minced
Cook potatoes with oil, salt, and spices in a covered pan on medium heat for 2-3 minutes.
Add water, cover pan, and continue to cook for about 8 minutes, stirring occasionally.
Meanwhile, prepare onions and cilantro.
Once the potatoes are barely tender, turn up the heat to medium-high and sauté until slightly golden.
Toss with green onions and cilantro and serve as a side dish.
