SERVING SIZE: 6 side salads
10 oz. Romaine lettuce
1 (15 oz) can (1.5 c) black beans, drained & rinsed
1/2 c corn
1 medium carrot, peeled & grated
3 Tbsp cilantro, minced
1 green onion, minced
Salt & pepper to taste
1/2 lime, zested and then juiced
3 Tbsp olive oil
2 pinches of sugar
2 pinches of cayenne pepper
3/4 tsp fine salt
1/2 tsp black pepper
Wash greens thoroughly in a cold water bath.
Spin in salad spinner or place on towel to dry.
Gently shred lettuce into bite-sized pieces.
In a large bowl add lime zest and juice, sugar, cayenne pepper, salt, and black pepper. Whisk together.
Continue whisking quickly while slowly drizzling in 3 Tbsp of oil. Whisk until the dressing is thick and completely emulsified.
Add all prepared vegetables, herbs, and beans to salad bowl and gently toss.
Taste. Add more salt and pepper if desired. Serve!
