SERVES: 10 as a side salad
12 oz. of Romaine lettuce, chopped into ½ inch pieces
½ pint of cherry tomatoes, chopped in half or quarters
1 small cucumber, peeled, seeded, and cubed (optional)
4 oz. Parmesan, finely shredded
3 Tbsp fresh basil (or 1 tsp dry), cut into thin ribbons
2 Tbsp fresh parsley (or 1 tsp dry), minced
¼ cup salted sunflower seeds
2 Tbsp balsamic vinegar
2 pinches of sugar
½ tsp kosher salt
¼ tsp black pepper
3 Tablespoons olive oil
Whisk together balsamic vinegar, salt, pepper, and sugar in a large bowl.
Very slowly drizzle in oil while continuously whisking.
Add prepared salad ingredients to a bowl and gently toss with dressing.
