Blueberry Lemon Compote


Serves 6


INGREDIENTS

  • 8 cups of blueberries

  • ¾ cup maple syrup

  • 4 lemon, zested then juiced

  • 2 teaspoons grated ginger


DIRECTIONS

  1. In a medium pot on medium-high heat, add blueberries, maple syrup, lemon juice, grated ginger, and lemon zest.

  2. Bring mixture to a simmer, then turn heat down to medium low, and simmer for 10-13 minutes, stirring occasionally and mashing berries with a masher.

  3. Once the mixture has thickened, remove from heat and set aside to cool slightly before serving.

  4. Serve on top of oatmeal pancakes.
