Blueberry Lemon Compote

Serves 6
INGREDIENTS
8 cups of blueberries
¾ cup maple syrup
4 lemon, zested then juiced
2 teaspoons grated ginger
DIRECTIONS
In a medium pot on medium-high heat, add blueberries, maple syrup, lemon juice, grated ginger, and lemon zest.
Bring mixture to a simmer, then turn heat down to medium low, and simmer for 10-13 minutes, stirring occasionally and mashing berries with a masher.
Once the mixture has thickened, remove from heat and set aside to cool slightly before serving.
Serve on top of oatmeal pancakes.
