Buffalo Chickpea Salad

Serves 6
INGREDIENTS
2 (15 oz) cans chickpeas, drained and rinsed
1 medium carrot, chopped
1 stalk celery, chopped
3 green onions, minced
½ red bell pepper, chopped
½ cup regular hummus
4 Tablespoons Franks Red Hot buffalo hot sauce
1 teaspoon salt
1 teaspoon pepper
¾ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon paprika
½ cucumber, sliced for toppingÂ
1 box Whole Grain Crackers
DIRECTIONS
Rinse and drain the chickpeas over a colander.
In a large bowl add the chickpeas and mash with a fork or potato masher. Mash until almost smooth, with some pieces of visible chickpea to keep some texture.
Add the carrots, celery, green onions, and pepper, mixing until combined.
Add in all the spices. Mix until combined
Mix the hot sauce and hummus together until combined.Â
Add the hot sauce and hummus mixture to the bowl, and mix until evenly coated.
Scoop a heaping spoonful of the chickpea salad onto a whole grain cracker. Top with a slice of cucumber if desired. Then serve.
Note: This recipe can also be used as an entrée. You can serve it in a whole grain wrap adding in some spring lettuce or other salad greens. It is also delicious with a drizzle of ranch dressing added on top.
