YIELDS: 4-5 chick'n patties
INGREDIENTS
Chick'n Sandwich Ingredients
1 (15oz) can chickpeas, drained & rinsed
1 large egg
¼ cup cornmeal
1-2 Tbsp all-purpose flour
2 green onions, minced
½ tsp garlic powder
½ tsp smoked paprika
¼ tsp salt
2 pinches cayenne pepper
2 pinches black pepper
1-2 Tbsp hot sauce (optional--if you would like a spicy sandwich)
Whole wheat buns
Creamy Ranch Sauce
1 (5.3oz) container plain Greek yogurt
2 tsp mayonnaise
½-1 tsp Dijon mustard
¼ tsp onion powder
½ lemon juiced
½ tsp sugar
1 Tbsp dill, minced
Salt & black pepper to taste
Optional Toppings
Lettuce or leafy greens
Red onion, sliced
Tomatoes, sliced
Pickles, sliced
DIRECTIONS
In a large bowl add chickpeas, mash with a fork or masher until it becomes a chunky paste. Then add egg, breadcrumbs, green onion, and seasonings. Fold all ingredients until thoroughly combined (add 1-2 Tbsp flour, if mixture is too wet). Let mixture sit for 5 minutes. Make Creamy Ranch Sauce.
Creamy Ranch Sauce: In a small mixing bowl, add all sauce ingredients. Taste and adjust for seasoning. Set aside in the refrigerator for later.
Measure out ¼ cup of chickpea mixture and form into ½-inch thick patties.
Heat 2-3 Tbsp oil in a large skillet on medium high. Place patties in the skillet and cook until golden brown on each side –about 4-5 minutes per side.
Place a cooked Chick’n patty on a whole wheat bun. Top with Creamy Ranch Sauce and other Optional Toppings if desired.
