1/4 cup olive oil
2 Tbsp red or white wine vinegar or lemon juice
1/2 tsp dried oregano
1 small garlic clove, grated or minced
1/4 tsp sugar
1/2 tsp salt
1/4 tsp pepper
10 oz salad greens, shredded
1 small red onion, thinly sliced
1 small red bell pepper, diced
1 Roma tomato, diced
2 oz Parmesan or other Italian cheese, finely grated
4 pepperoncini pickled peppers, thinly sliced
5 Kalamata olives, pitted & sliced
Whisk together all of the dressing ingredients except the oil, then slowly whisk in the oil until thick.
Combine salad ingredients in a large bowl. Add dressing as desired. Toss and serve.
