Italian Chopped Salad



Italy (SERVES 4-6)


INGREDIENTS


Dressing Ingredients​

  • ¼ c olive oil

  • 2 Tbsp red or white wine vinegar or lemon juice

  • ½ tsp dried oregano

  • 1 small clove garlic, grated or minced

  • ¼ tsp sugar

  • ½ tsp salt

  • ¼ tsp pepper

Salad Ingredients

  • 10 oz salad greens, shredded

  • 1 small red onion, thinly sliced

  • 1 small red bell pepper, diced

  • 1 Roma tomato, diced

  • 2 oz Parmesan or other Italian cheese, finely grated

  • 4 pepperoncini pickled peppers, thinly sliced

  • 5 Kalamata olives, pitted & sliced​

SERVE WITH

  • Corn Tortillas, warmed

  • Pico de Gallo

  • Sour Cream

DIRECTIONS

  1. Whisk together all of the dressing ingredients except the oil, then slowly whisk in the oil until thick.

  2. Combine salad ingredients in a large bowl. Add dressing as desired. Toss and serve.
