Elote-Style Dip

INGREDIENTS

  • 1-3 Tbsp canola oil

  • About 2 cups sweet corn, (if canned, drain & rinse)

  • ½ cup plain Greek yogurt or sour cream

  • 1 lime, zested & juiced

  • 1 large garlic clove, grated or minced

  • ¼ tsp cumin

  • ¼ tsp chili powder

  • ¼ tsp cayenne pepper

  • 1 medium poblano pepper, seeded & finely chopped

  • 3 green onions OR ½ medium red onion, finely chopped

  • ¼ cup cilantro, minced

  • ¼- ½ cup (2-4 oz.) cotija cheese or feta, crumbled



DIRECTIONS

  1. Heat oil in a large skillet on medium-high heat. Add corn and sauté for 6-8 minutes or until browned. Once the corn is browned, turn off heat and let it cool in the pan for 2-3 minutes.

  2. In a medium bowl, mix Greek yogurt, lime zest & juice, garlic, and spices.

  3. Add corn, poblano pepper, onion, cilantro, and cheese to the bowl. Mix thoroughly and taste for seasoning.

  4. Serve warm with tortilla chips or on its own as a side.
