SERVING SIZE: 4 side portions
1 medium russet potato, peeled and diced (½ inch)
2 Yukon gold potatoes, peeled and diced (½ inch)
4 ½ cups water + ½ tsp salt
½ tsp salt
½ tsp garlic powder
2 Tbsp butter
2 Tbsp chives or 2 green onions, minced
In a pot on high heat, add water, salt, and potatoes. Cover the pot with a lid and bring water to a boil. Cook for 12-14 minutes, or until fork tender.
Once potatoes are fork tender, drain potato water. Add salt, garlic powder, butter to the potatoes and mash with a masher or fork.
Fold in chives or green onion. Serve warm.
