Garlic & Chive Mashed Potatoes

SERVING SIZE: 4 side portions


  • 1 medium russet potato, peeled and diced (½ inch)

  • 2 Yukon gold potatoes, peeled and diced (½ inch)

  • 4 ½ cups water + ½ tsp salt

  • ½ tsp salt

  • ½ tsp garlic powder

  • 2 Tbsp butter

  • 2 Tbsp chives or 2 green onions, minced


  1. In a pot on high heat, add water, salt, and potatoes. Cover the pot with a lid and bring water to a boil. Cook for 12-14 minutes, or until fork tender.

  2. Once potatoes are fork tender, drain potato water. Add salt, garlic powder, butter to the potatoes and mash with a masher or fork.

  3. Fold in chives or green onion. Serve warm.
