YIELD: 4-5 side-salads
1 (15 oz.) can white beans, drained & rinsed
1 (10oz) head Romaine lettuce, chopped
2 green onions, finely chopped
½ cucumber, peeled and cut into ¼ -inch thick circles, then quartered
2 oz. feta cheese, crumbled
5 Kalamata olive, pitted & quartered
5 cherry tomatoes, quartered
Salt & pepper to taste
Greek Dressing Ingredients
2 Tbsp red wine vinegar or fresh lemon juice
½ teaspoon dried oregano
2 tsp fresh dill, minced
2 tsp fresh parsley, minced
¼ tsp garlic powder
¼ tsp sugar
¼ tsp salt
¼ tsp black pepper
¼ cup olive oil
Prepare all salad ingredients as directed above. Add all salad ingredients into a large mixing bowl. Then make the dressing.
Whisk together all dressing ingredients, except oil. Slowly whisk in oil until dressing has thickened.
Pour dressing over the salad and toss until evenly coated. Taste and adjust for seasoning. Serve.
