Mashed Sweet Potatoes with Candied Pepitas


SERVES: 12 side portions (Mashed Sweet Potatoes)

YIELD: 1 cup (Candied Pepitas)


INGREDIENTS


Mashed Potato Ingredients

  • 3 lbs. sweet potatoes (6 large, sweet potatoes)

  • ¼ cup milk

  • 3 Tbsp packed brown sugar

  • 4 Tbsp butter

  • ¼ tsp cayenne pepper cayenne

  • 1 ½ tsp salt

Candied Pepitas Ingredients

  • 1 cup raw pepitas (pumpkin seeds)

  • 3 Tbsp sugar

  • ¼ tsp kosher salt

  • 1/8 tsp cayenne

Garnish

  • 2 Tbsp maple syrup

  • ¼ cup crushed candied pumpkin seeds (see directions below)*


DIRECTIONS


Mashed Sweet Potato Directions

  1. Peel and cut the sweet potatoes into 1-inch cubes.

  2. Place in a large pot with just barely enough water covering the potatoes.

  3. Boil until falling apart. Drain. Mash with a masher, stir in all other ingredients. Garnish and serve.

Candied Pepitas Directions

  1. In a large skillet over medium-high heat, toast the pepitas until they turn light brown and pop. Stir frequently.

  2. Transfer toasted pepitas to a plate to cool.

  3. In the same skillet distribute the sugar in an even layer and heat until it turns amber. DO NOT STIR.

  4. Turn off the heat, add the toasted pepitas, salt and cayenne pepper and combine with a heatproof spatula.

  5. When the pepitas all clump together, transfer to a plate to cool.

  6. Once cool enough to handle, break into pieces or crush and garnish mashed sweet potatoes.

  7. Store extra in an airtight container for weeks.
