YIELDS: 9-12 cups popcorn
½ cup popcorn kernels
½ tsp fine salt
3 Tbsp canola oil
3 Tbsp butter
Add popcorn kernels, salt, and oil to a 4-quart (or larger) pot. Cover with a not-too-tight lid so steam can escape.
Place pot over a high flame and wait for kernels to begin popping.
When kernels begin to pop, move pot back and forth just above flame to avoid burning. Continue shaking pot until popping almost stops.
Turn off heat, stir in any salt that accumulated on the side of the pot, and transfer popcorn to a bowl.
Add 3 Tbsp butter to the warmed pot to melt, then drizzle over the popcorn. Toss to mix.
