1 medium sweet potato, peeled
2 medium baking potatoes, peeled
¼ c minced chives or green onion
1 Tbsp flour
1 tsp kosher salt
Shred the sweet potato and potatoes onto a towel.
Repeatedly squeeze out as much water as possible from the potatoes.
Add chives or onions, flour, eggs, and salt to the dry potatoes; gently mix.
Heat oil in a 12" skillet over medium heat. Ladle 1/8 cup portions into the fry pan.
Cook until golden brown.
Serve hot. Garnish with applesauce or sour cream.
