Potato & Sweet Potato Latkes

  • 1 medium sweet potato, peeled

  • 2 medium baking potatoes, peeled

  • ¼ c minced chives or green onion

  • 1 Tbsp flour

  • 2 eggs

  • 1 tsp kosher salt

  • Vegetable oil


  • Sour cream

  • Applesauce


  1. Shred the sweet potato and potatoes onto a towel.

  2. Repeatedly squeeze out as much water as possible from the potatoes.

  3. Add chives or onions, flour, eggs, and salt to the dry potatoes; gently mix.

  4. Heat oil in a 12" skillet over medium heat. Ladle 1/8 cup portions into the fry pan.

  5. Cook until golden brown.

  6. Serve hot. Garnish with applesauce or sour cream.
