SERVES: 12 side portions
INGREDIENTS
3 lbs. sweet potatoes (6 large, sweet potatoes)
2 – 4 Tbsp milk or stock
1 ½ tsp salt
1/3 cup minced chives
1/3 cup minced parsley
1 small garlic clove, grated
¼ cup sour cream
3 Tbsp butter
Garnish
Minced herbs
Sour cream
DIRECTIONS
Peel and cut the sweet potatoes into 1-inch cubes.
Place in a large pot with just barely enough water covering the potatoes.
Boil until falling apart. Drain. Mash with a masher or fork, stir in all other ingredients.
Garnish and serve warm.
