Savory Mashed Sweet Potatoes with Herbs


SERVES: 12 side portions


INGREDIENTS

  • 3 lbs. sweet potatoes (6 large, sweet potatoes)

  • 2 – 4 Tbsp milk or stock

  • 1 ½ tsp salt

  • 1/3 cup minced chives

  • 1/3 cup minced parsley

  • 1 small garlic clove, grated

  • ¼ cup sour cream

  • 3 Tbsp butter


Garnish

  • Minced herbs

  • Sour cream


DIRECTIONS

  1. Peel and cut the sweet potatoes into 1-inch cubes.

  2. Place in a large pot with just barely enough water covering the potatoes.

  3. Boil until falling apart. Drain. Mash with a masher or fork, stir in all other ingredients.

  4. Garnish and serve warm.
