Creamy Black Bean Dip

SERVES 6


INGREDIENTS

1 (15 oz) can black beans, drained and rinsed

1 small clove garlic, minced

1/4 cup sour cream

3 Tablespoons cilantro leaves, minced

1 lime, juiced

1/4 teaspoon cumin

1/4 teaspoon smoked paprika

1 teaspoon fine salt

1-2 Tablespoons water if too thick


​Garnish

1 Tablespoon fresh cilantro, minced

1 stalk green onion, minced


DIRECTIONS

  1. Put all ingredients in a bowl (except garnish).

  2. Purée with a masher or fork until smooth.

  3. Add water if too thick. Taste and adjust seasoning.

  4. Garnish and serve.
