SERVES: 6
INGREDIENTS
1 (15 oz.) can black beans, drained and rinsed
1 small clove garlic, minced OR ½ tsp garlic powder
¼ cup sour cream or Greek yogurt
3 Tbsp cilantro leaves, minced
1 lime, juiced
¼ tsp cumin
¼ tsp smoked paprika
1 tsp fine salt
1-2 Tbsp water if too thick
Garnish
1 Tbsp fresh cilantro, minced
1 stalk green onion, minced
DIRECTIONS
Put all ingredients in a bowl (except garnish).
Purée with a masher or fork until smooth.
Add water if too thick. Taste and adjust seasoning.
Garnish and serve.
