Tofu & Vegetable Lettuce Wraps w/Spicy Sesame & Sesame ginger sauce

Yields 10-12 Wraps
Tofu & Vegetable Lettuce Wrap INGREDIENTS
2 Tablespoons sesame seed oil
1 (14oz) block of extra firm tofu, pressed & crumbled
1 (14 oz) can chickpeas, drained & rinsed
2 tablespoons soy sauce
1 teaspoon red chili flakes
1 teaspoon black pepper
1 large carrot, diced (about ½ inch cubes)
1 medium zucchini, diced (about ½ inch cubes)
½ red bell pepper, diced (about ½ inch cubes)
1-inch ginger root, grated or minced
2 garlic cloves, grated or minced
1 cup napa or green cabbage, finely chopped
4 green onions, finely chopped
¼ cup cilantro, minced
1 (10 oz or larger) head of romaine lettuce, washed

● Sesame Ginger Dipping Sauce
Spicy Sesame Dipping Sauce INGREDIENTS
1⁄4 cup Seed or nut butter (tahini, peanut butter, sunflower
butter, etc.)
3 Tablespoons Soy sauce
1⁄2 teaspoon sugar (optional)
1 Lime, juiced
1 teaspoon sesame seed oil
1 teaspoon red chili flakes
1-2 Tablespoon warm water (optional)
Sesame Ginger Dipping Sauce INGREDIENTS
1⁄2 cup rice vinegar
1⁄4 cup soy sauce
1⁄2 teaspoon fresh ginger, grated
1 small garlic clove, minced or grated
1 green onion, minced
1 teaspoon sesame seeds
DIRECTIONS
In a large skillet, heat oil over medium-high heat. Add tofu, chickpeas,
soy sauce, and spices. Sauté for 5-7 minutes or until tofu and chickpeas
become golden brown.
Then add carrot, zucchini, and bell pepper. Sauté for 3-5 minutes. Stir in
garlic and ginger for 30 seconds or until fragrant.
Add cabbage, green onions, and cilantro, cook, and stir for another 2
minutes or until the cabbage has wilted.
Make sauces using a whisk to combine ingredients together, adding water to the spicy sesame dipping sauce for desired thickness as needed.
Serve tofu filling in the lettuce cups. Garnish with Spicy Sesame or
Ginger Sesame Dipping Sauce.
