Tzatziki Dip


Serves 8


INGREDIENTS

  • 1 cucumber, grated

  • 1 ½ cups plain Greek yogurt

  • 2 Tablespoons olive oil

  • 2 Tablespoons fresh mint, minced

  • 2 Tablespoons dill, minced

  • 1 Tablespoon lemon juice

  • 1 garlic clove, minced

  • ½ teaspoon kosher salt


DIRECTIONS

  1. Place a box grater on a clean kitchen towel. Shred cucumber using the large holes on the box grater.

  2. Wring out excess water from shredded cucumber. (You may need to repeat several times.)

  3. Transfer cucumber to a mixing bowl. Add yogurt, olive oil, herbs, lemon juice, garlic, and salt. Stir to blend and let sit for 5 minutes.

  4. Serve on veggies, crackers, or pita.
