Tzatziki Dip

Serves 8
INGREDIENTS
1 cucumber, grated
1 ½ cups plain Greek yogurt
2 Tablespoons olive oil
2 Tablespoons fresh mint, minced
2 Tablespoons dill, minced
1 Tablespoon lemon juice
1 garlic clove, minced
½ teaspoon kosher salt
DIRECTIONS
Place a box grater on a clean kitchen towel. Shred cucumber using the large holes on the box grater.
Wring out excess water from shredded cucumber. (You may need to repeat several times.)
Transfer cucumber to a mixing bowl. Add yogurt, olive oil, herbs, lemon juice, garlic, and salt. Stir to blend and let sit for 5 minutes.
Serve on veggies, crackers, or pita.
