Chai Spice Skillet Granola


Serves 8-10


INGREDIENTS

  • 2 tablespoons canola oil

  • 6 tablespoons maple syrup

  • 2 cups quick oats

  • ½ cup raisins

  • ½ cup roasted sunflower seeds

  • ½ cup roasted pumpkin seeds (papitas)

  • 2 teaspoons cinnamon

  • 1 teaspoon ground ginger

  • 1 teaspoon cardamom

  • 1 teaspoon allspice

  • 1 teaspoon vanilla

  • ¼ fine salt


DIRECTIONS

  1. Heat a large skillet over medium-high heat, add canola oil, vanilla, and maple syrup.

  2. Cook oil, vanilla, and syrup by stirring occasionally until bubbly, about 30-60 seconds.

  3. Stir in oats, raisins, sunflower seeds, and pumpkin seeds.

  4. Continue combining mixture with spatula until the oats and seeds turn golden brown and fragrant. About 3-4 minutes.

  5. Stir in spices and salt and remove from heat. Press granola into pan and let cool completely.

  6. Once cool, break into clumps and serve with greek yogurt.
