Lemon & Herb White Bean Dip


Serves 8


INGREDIENTS

  • 3 cups white beans, drained and rinsed

  • ½ cup fresh parsley, chopped

  • ⅓ cup chives, chopped

  • 2 garlic cloves, minced

  • 3 Tablespoons olive oil

  • 1 tablespoon parsley, minced

  • ½ lemon, zested then juiced

  • 1 teaspoon thyme, minced

  • 1 teaspoon kosher salt

  • ½ teaspoon black pepper

  • 1 teaspoon onion powder

  • 2 teaspoon fresh rosemary, minced


DIRECTIONS

  1. Add beans, garlic, herbs, lemon juice, zest, oil, and spices to a mixing bowl and puree until smooth with a potato masher.

  2. Let sit for 5 minutes to allow flavors to meld. Add salt to taste.

  3. Serve with veggies, crackers, or pita.
