Lemon & Herb White Bean Dip

Serves 8
INGREDIENTS
3 cups white beans, drained and rinsed
½ cup fresh parsley, chopped
⅓ cup chives, chopped
2 garlic cloves, minced
3 Tablespoons olive oil
1 tablespoon parsley, minced
½ lemon, zested then juiced
1 teaspoon thyme, minced
1 teaspoon kosher salt
½ teaspoon black pepper
1 teaspoon onion powder
2 teaspoon fresh rosemary, minced
DIRECTIONS
Add beans, garlic, herbs, lemon juice, zest, oil, and spices to a mixing bowl and puree until smooth with a potato masher.
Let sit for 5 minutes to allow flavors to meld. Add salt to taste.
Serve with veggies, crackers, or pita.
