INGREDIENTS
Bean Dip
1 1/2 cups white beans (one 15 oz can)
1 small garlic clove, grated
3 tsp lemon juice
(about ½ lemon)
3 Tbsp olive oil
3 Tbsp minced fresh parsley
¼ tsp Kosher salt
1/8 tsp black pepper
Garnish
1 Tbsp olive oil, drizzled
1 Tbsp minced fresh parsley
2 tsp balsamic vinegar or lemon juice (optional)
DIRECTIONS
Drain and rinse white beans.
Put all ingredients in a bowl, except garnish.
Purée with a masher or fork. Taste and adjust seasoning.
Garnish by drizzling olive oil and sprinkling on some fresh parsley. Serve and enjoy!
