White Bean Dip



SERVES: 6


INGREDIENTS


  • 1 (15 oz. can) white beans

  • 1 small garlic clove, grated

  • 3 tsp lemon juice (about ½ lemon)

  • 3 Tbsp olive oil

  • 3 Tbsp minced fresh parsley

  • ¼ tsp Kosher salt

  • 1/8 tsp black pepper

​Garnish

  • 1 Tbsp olive oil, drizzled

  • 1 Tbsp minced fresh parsley

  • 2 tsp balsamic vinegar or lemon juice (optional)


DIRECTIONS

  1. Drain and rinse white beans.

  2. Put all ingredients in a bowl, except garnish.

  3. Purée with a masher or fork. Taste and adjust seasoning.

  4. Garnish by drizzling olive oil and sprinkling on some fresh parsley. Serve and enjoy!
